When Israeli chef Or Barziv opened his Mediterranean hummus restaurant in downtown Charleston, he wasn’t just introducing locals to a beloved Middle Eastern dish. He was inviting them into a lifestyle rooted in warmth, tradition, and well-being.

Barziv, who grew up in Israel, remembers hummus not as a trend but as a ritual. “It was always on the table: breakfast, lunch, dinner,” he says. “It’s not just something you eat, it’s something you share. It brings people together.”

Barziv often heard this from first-time customers. “But it’s satisfying, packed with what your body needs. It fills you up, not out. That’s the kind of food I believe in.”

His approach to hummus mirrored that belief. Inspired by the vibrant street food of Tel Aviv, his team soaked chickpeas overnight, simmered them gently, and blended them while still warm to achieve a creamy, ultra-smooth texture. Every bowl was finished with a drizzle of olive oil, a handful of roasted vegetables, fresh herbs, or, for something heartier, spiced lamb or a swirl of tahini.

Bringing the Mediterranean Home

The rest of the menu followed suit. Colorful salads, warm pita, and bold Mediterranean dips made every meal feel festive and full of flavor. But the humble chickpea remained the star of the table.

“They’re small, but mighty,” Barziv says. “Good for your heart, digestion, energy—and they’re affordable. What more could you ask for?”

“There’s no shortcut to good hummus,” he adds. “But it’s worth it. You can taste the care and nourishment in every bite.”
