Fluffy Buttermilk Pancakes from Scratch

Homemade buttermilk pancakes really are in a different league from anything that comes out of a box. They’re soft, fluffy, just a little tangy, and perfectly golden on the outside. Once you make them this way, it’s hard to go back. The best part is how simple they are. You can have the batter ready in minutes, and before you know it, you’ve got a stack of warm pancakes that make the whole kitchen feel a little more inviting. It’s the kind of breakfast that slows everyone down in the best way.

Classic Buttermilk Pancakes

Serves: 4
Total Time: About 20 minutes

Ingredients

1 teaspoon vanilla extract

1½ cups all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1¼ cups buttermilk

1 egg

3 tablespoons melted butter

Instructions

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.

Pour the wet ingredients into the dry and gently stir until just combined. The batter should be slightly lumpy, that’s exactly what you want.

Heat a griddle or nonstick skillet over medium heat and add a small pat of butter.

Pour about ⅓ cup of batter for each pancake. Cook until bubbles begin to form on the surface and the edges look set, about 2 to 3 minutes.

Flip and cook for another 1 to 2 minutes, until golden.

Serve warm with butter and real maple syrup.

It really comes down to two simple things: buttermilk and restraint. The buttermilk reacts with the baking soda to create those light, airy pockets that give pancakes their soft, fluffy texture. It also adds a subtle tang that balances the sweetness. The second part is knowing when to stop mixing. It’s tempting to stir until the batter is completely smooth, but that’s what leads to dense, flat pancakes. A few lumps are not just okay, they’re exactly what you’re aiming for.

This is one of those breakfasts that feels a little special without being complicated. It’s perfect for slow weekends, when there’s time to linger at the table, or for mornings when you want to make something warm and familiar for the people you love.
